Biryani is arguably Pakistan's most beloved dish, but it's not one recipe, regional variation is significant and worth understanding.

Karachi/Sindhi biryani: Typically spicier and more heavily flavoured than other regional styles, often featuring a distinctive tangy note from potatoes and a bolder use of chili.

Punjabi biryani: Generally milder and more aromatic, with a different spice balance than the Sindhi style, often served at weddings and large gatherings.

What makes good biryani: Properly layered rice and meat allowed to steam together (the "dum" cooking method), rather than simply mixed, the difference is noticeable to a discerning palate.

Where to try it: Karachi's Burns Road for the Sindhi style specifically, or any well-established biryani house in Lahore for the Punjabi version, ask locally for current recommendations, since reputation shifts between establishments over time.
